Holly's Veggie Burgers

Potatoes
Garlic
Quinoa
Amaranth
Buckwheat
Mung Beans
Chickpeas
Adzuki Beans
Green Lentils
Red Lentils
Sea Salt
Italian Seasoning
Olive Oil

2 pots 1 cast iron skillet

Turn one burner on at lowest setting, pour enough olive oil to slightly cover bottom and set on burner to keep warm

2 cups of water in each pot and let them come to boil.

Add 4 red potatoes in one pot and let it boil until potatoes are soft enough to mash well. Leave skins on.

Add 1 teaspoon of Quinoa, Amaranth, Buckwheat, Mung Beans, Adzuki Beans, Green Lentils, Red Lentils and 20 Chickpeas to other boiling pot of water, let it boil for 2 or 3 minutes then turn burner of and let it set covered.

Chop, don't mince, 4 to 6 cloves of garlic

When potatoes are done, drain, let sit to cool for a bit, then put in mixing bowl to mash. Add sea salt and Italian Season and mash/blend with potatoes.

Go back to the other pot, drain, put in blender with chopped garlic, add 4 teaspoons of the boiled water from the pot(when draining, drain in other pot to save the water to use in mix) and blend, then add to the mashed potatoes.

Mix together by hand, form your patties, and put in Skillet. Make sure u turn up the heat on it so they can cook. Pour a little olive oil on each patty. Cook them like u would hamburgers. Brown on each side. Bon appetite.
