A.M. Delight Muffins

2- cups Whole Wheat Flour 1/2 cup Almond Milk
3/4- Cup Sucanat 1 1/2 tsp Vanilla Extract
2 tsp baking powder 2 cups Chopped Peeled Apples
1- 1/2 tsp cinnamon 2 cups grated carrots
1/2 tsp sea salt 1/2 cup grated coconut
3 Hormone free eggs 1/2 cup raisins
1/2 cup olive oil 1/2 cup sliced almonds

Mix dry ingredients in one bowl. Mix wet ingredients in another bowl. Mix wet and dry ingredients until just moistened, then fold in nuts, fruits, and veggies.

Fill 3/4 full greased muffin cups or pan. Bake in 375 degree oven 20-25 minutes. Makes 18 muffins.
